Roasted Garlic

Roasting garlic gives it a mellow flavor.  It can be added to mashed potatoes, or rubbed on toasted Italian bread.

2 heads garlic

3 tablespoons olive oil

 

Preheat your oven to 350 degrees.  Cut off the stem ends from the garlic to expose the cloves. Place the garlic in the center of two sheets of aluminum foil, and drizzle the tops with the olive oil. Fold the foil over and seal to enclose the garlic. Roast in the over for about 45 minutes, or until the garlic is soft when pierced with a fork. Open the packet and let the garlic cool before squeezing the garlic out of the skins.

Once removed from the skins, this garlic can be stored in a tightly covered container in the refrigerator up to 1 month.  Add enough olive oil to the container to cover the garlic.
